Cooking temperatures

If you like your meat medium rare, then you’re aiming for a reading of 130-140° F. For medium, you want a range of 145-155° F. Bear in mind that the meat will continue to cook and the temperature will continue to rise (but just by a bit) after you take it out of the oven, so don’t forget to take this into account.
