Light or dark?

Remember that light beers will have a lighter impact on your recipes. Use them when cooking poultry or seafood and in dishes that you only want to subtly enhance with the taste. For more oomph, go darker (stouts, porters). If it helps, think light dish - light beer, heavy dish - dark beer (although this isn't set in stone). And likewise for your desserts. The heavier you go, the richer they'll be.
