Contrary to marinades, hearty stews can take on heavier, darker brews, such as stouts or porters. Beef stew pairs especially well with Guinness or German doppelbocks, while lighter veggie-based stews favor brown ales and fish or poultry-based stews call for wheat beers. Regardless, the malty, toasted taste of each adds a rich flavor dimension throughout the slow cooking process. Be sure to use 1/2 cup beer to deglaze the pan before adding another 1/2 cup with the cooking broth. You can add more as you go along, if you want to intensify the flavor.
