As if beer couldn't get any more versatile, you can even sneak it into your salad dressing for a flavorful kick. Try this delicious IPA Caesar dressing recipe to start: in a food processor, blend together 6 packed anchovy filets, 1 crushed garlic clove, 2 egg yolks, 1/2 teaspoon Dijon mustard and 1/4 cup lukewarm IPA beer. Process until you get an almost translucent, foamy consistency. Briefly heat 2 tablespoons olive oil in the microwave, then drizzle it into the anchovy mixture until it forms an emulsion. Add 3 tablespoons Parmesan cheese, and season with salt and pepper to taste. Pulse a few times to combine.
