Start with a basic Salsa Fresca recipe by mixing 5 chopped tomatoes with 1 red onion. Add 1 handful of fresh cilantro and 1/2 a handful of fresh mint. The mint should add extra flavor without overpowering the cilantro. Then toss in some finely chopped fresh or canned jalapenos. You can also replace the red onion with spring onion if you prefer. Finally, season with 1 teaspoon of cumin, the juice of 1 lemon and salt to taste. Chill for 1 hour before serving so that the flavors have time to fully develop.
