Stuffed mussels are so easy to make and quite filling thanks to the stuffing. In a large pot, cook 4 pounds of cleaned mussels with 1 cup white wine and some finely chopped parsley. Once the mussels open, remove them from the shells and reserve. To make the sauce, melt 2 tablespoons butter, add 1 tablespoon flour and then slowly pour in 1 cup milk while constantly stirring. Off the stove, add the yolk of 1 egg, 1/2 cup Parmesan cheese and mix well.
Place the shells on a baking sheet, then add 1 mussel and some cheese sauce on top of each shell. Top with breadcrumbs, then bake in the oven at 350° F for 15 minutes. Serve hot.
