Pepper sauce is probably THE best sauce out there to serve with red meat. There’s nothing like a big steak slathered in some homemade pepper sauce.
To make it at home, start with some beef stock and then add a bit of sour or heavy cream, whole peppercorns (experiment with black, green or even pink!) and let cook for a few minutes. You can finish the sauce with a dash of cognac or white wine to give it a little kick. If you’re looking for an extra creamy consistency, then add a bit of butter or an extra spoonful of cream to the sauce right before serving.
