El Vez - Philadelphia, PA

Five types of homemade guacamole are featured on the menu at this hip Mexican eatery in Philly, where 20-to-30-somethings also come for the amazing ceviche and tacos. Open since 2003, El Vez was one of the first Latino restaurants in the city, and it's named after well-known Mexican Elvis impersonator Roberto Lopez, who went by the stage name"El Vez". In addition to the trendy cocktails and a bright, colorful contemporary setting, the menu puts a modern twist on a handful of classic Mexican dishes, leaving diners seduced by the food quality and overall experience.

Get this: All of the guac choices are worth a try. Pictured here is the Tito Santana version with mango, red bell peppers, jicama, habanero and serrano chiles.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
