This upscale Houston haunt serving Mexican fare with a modern twist is the chic sister to your grungy corner burrito shop. In fact, don't expect to see burritos on the menu, period. Instead, they're serving up a roster of refined Mexican dishes, including the almost-too-pretty-to-eat ceviche verde, classic dishes like chile en nogada (stuffed poblano peppers in a walnut cream sauce) and even chapulines, a dish of sauteed grasshoppers served with guac, house-made tortillas and a chipotle-tomatillo salsa.

Get this: Anything really, but if you feel like trying a more traditional dish, you can't go wrong with the chile relleno, a poblano stuffed with chicken, cheese, a green pumpkin seed sauce, Mexican rice and refried beans.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
