El Barrio in Birmingham opened in 2011 and it quickly became a local favorite for its modern take on multi-regional Mexican cuisine and locally sourced ingredients. With a hip, industrial-style interior and top-notch service, it's the kind of place people keep going back to for both the food and overall experience. The menu includes a roster of beloved faves like queso fundido, ceviche and tacos, but you'll also find some unexpected surprises like the grilled chorizo meatloaf and grapefruit margaritas, which are always a hit.
Get this: Anything really, but if you want to try something different, get the plaintain nachos topped with roasted pork, pickled jalapenos, ancho chile, cotija cheese and lime crema.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
