Fogón Cocina Mexicana is a family-owned Seattle gem where you'll find irresistible housemade tortillas, margaritas served with the cocktail shaker for easy refills and free loaded mini tostadas in place of the usual chips and salsa (which you won't be mad about). Over the past decade, this spot has become a beloved institution in Capitol Hill, known for its excellent service and unbeatable happy hour deals. The food is also outstanding, with a menu crafted around modern recipes rooted in Michoacán cuisine. FYI: The noise level can get pretty high, so it's probably not the best place for an intimate date.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
