Opened by Vicente "Chente" Cossio in 1987, the restaurant remains in the family with his daughter Connie having since taken over, serving up the same famously delicious recipes today. With a casual, beachy interior and a big patio, the restaurant is known for its authentic regional Nayarit cuisine. Go there for the killer ceviches, above-average tacos and the legendary snook, a whole grilled fish that takes 30 min. to cook and comes out wonderfully flaky and delicious. A large part of the menu is dedicated to shrimp, which they import, along with fish and other ingredients from Sinaloa and Nayarit.

Get this: Pescado zarandeado (grilled snook) seasoned with salt and served in a house sauce with caramelized onions and tortillas.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
