Step into 1-Michelin starred Oxomoco in Brooklyn's Greenpoint neighborhood, and you might get the impression that you're not in Brooklyn anymore. In a bright, airy, skylit atmosphere with greenery speckled throughout the dining room, you'll sit down to a meal of fancied up dishes inspired by multiple regions of Mexico. Chef Justin Bazdarich uses a wood-fired oven to bring a smoky complexity to much of the menu, including smoked cherry tomatoes in the guacamole, wood-fired romaine in the "punta verde caesar" and the famous "polla a las brazas" (pictured). Of course, if you're craving tacos, they've got a wonderfully flavorful lamb barbacoa option or soft shell crab. Prices are expectedly steep, but the food won't let you down.

Get this: Pollo a las brazas—a grilled half-chicken seasoned with a traditional Mexican chile paste, honey, salsa, pickled onions and served with crispy red rice.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
