Chef/owner Roberto Santibañez has been a pillar of Mexican cuisine in the States, and his D.C. restaurant Mi Vida is just one of the places where you can enjoy his enticing selection of modern Mexican street foods and traditional fare in a colorful, industrial chic setting. With gorgeous views of The Wharf, its price point falls on the more "upscale" end, but the food is generally up to par. Don't miss the outstanding guacamole, with interesting add-on options like blue cheese, grapes and smoked almonds. Other standouts include the crab and shrimp empanadas, braised brisket enchiladas in mole negro sauce and their delicious margaritas.

Get this: Pescado a la talla - roasted whole butterflied branzino in red & green adobo sauces, served with black beans and a radish garnish.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
