South Philly Barbacoa - Philadelphia, PA

South Philly Barbacoa has been a famed spot for barbacoa ever since it appeared on Netflix shows Chef's Table and David Chang's Ugly Delicious. Owned and operated by Chef Cristina Martinez and her husband Ben Miller, the restaurant is only open on weekends but starts serving at the crack of dawn (5 am to be specific). Expect lines, bring cash, and if you feel like something other than barbacoa, take your pick of the quesadillas, tamales, pancita (spicy lamb offal sausage)—whatever you choose, you'll realize the place is worth every bit of hype.

Get this: Barbacoa tacos (obviously) and the consommé (soup with rice and chickpeas) is another menu fave.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
