La Casita Mexicana - Bell, CA

This decades-old traditional Mexican restaurant in Bell, California serves up Jalisco-style cuisine in a bright and colorful atmosphere, spattered with various pieces of Mexican art. The chefs and owners Jaime Martín Del Campo and  Ramiro Arvizu both grew up in Jalisco, and they've brought their family recipes to LA to the delight of its local following and visitors passing through. Mole is a serious business here, as is the chile en nogada, which garners rave reviews. Reservations are recommended, and if you can get a table on the beautiful outside patio, you'll be enchanted by both the ambiance and the food.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
