La Super-Rica Taqueria  - Santa Barbara, CA

Julia Child famously named La Super-Rica Taqueria as her favorite place to eat in Santa Barbara, and the success that followed continues today. Expect (very) long lines if you go during peak hours, but even then, the wait is well worth it. Opened in 1980 by Isodoro Gonzalez, the no-frills, family-run restaurant is known for its handmade tortillas freshly prepared for each order and the flavorful, generous portions of grilled meats piled on top. Other highlights include their authentic tamales and super cheesy quesadillas. Prices are reasonable, so don't be expecting anything fancy. This is simple Mexican comfort food at its best.

Get this: Super-Rica Especial—3 tortillas served with a heaping portion of marinated pork, charred pasilla chiles and mozzarella.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
