El Charro Café - Tucson, AZ

El Charro Cafe is a true veteran in its genre—it opened an entire century ago and is still going strong, thanks to its legendary carne seca (dried beef) dish and archetypal Mexican decor, transporting you to some charming Sonoran eatery in spirit. It has even been said that the beloved chimichanga (deep-fried burrito) was invented at El Charro by accident in the late 1940s or 50s by then-owner Monica Flin. Now, Flin's niece Carlotta Flores runs the restaurant, serving up a huge menu of classic Mexican dishes like enchiladas, soups, chile relleno, fajitas, burros, tamales, tacos, mole, carne asada—you name it, you can probably find it here.

Get this: Besides the famous carne seca platter, try the Tucson's Enchiladas Sonorenses—a Tucson tradition of native ground corn masa cakes, coated in red chile sauce, green olives, green onions and queso.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
