Angela's Cafe - Boston, MA

Late founder Ángela Atenco López, who passed a few years ago, first opened her eponymous East Boston Mexican restaurant in 2007. Since then, Angela's Cafe has opened a second location and has won the hearts of locals and visitors for its excellent, authentic-flavored Mexican cuisine. López crafted the menu around Pueblan dishes, which includes her famous mole poblano, a recipe passed down by her mother. And whether you're an early bird or late riser, both locations open at 8 am and serve breakfast until 3 pm. Try the "best-in-Boston" chilaquiles or huevos rancheros, which never disappoint.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
