Lasagna - Replace the noodles with veggies and skip the meat sauce

Lasagna is known for being a hearty, meaty, saucy, cheesy dish, so it's not surprising that some recipes can set you back almost 1,000 calories per serving. But that number can quickly be cut down to about 250 calories, if you make two simple changes: sub eggplant or zucchini slices for the noodles and omit the meat sauce. That's it! That's the hack.
