From Bulgogi to Bibimbap: 10 Mouthwatering Korean Recipes

Kimchijeon

If you love kimchi, you have to try this moist vegetable pancake that's often enjoyed as an appetizer or side dish. It's one of the most beloved Korean dishes, both for its ease of preparation and irresistible flavor combo: spicy, sweet, sour and savory. Serve it with a cold beer for a delicious snack.

Ingredients for 4 pancakes:

For the pancakes:

  • 1 cup kimchi
  • 2 scallions
  • 1 onion
  • 1 pinch of sugar
  • 1 pinch of pepper
  • 3/4 cup flour
  • 1 tbsp cornstarch
  • 1 egg
  • 1/3 cup + 2 tsp water

For the dipping sauce:

  • 1 tbsp soy sauce 
  • 1 tsp rice vinegar
  • 1 tbsp water
  • 1 pinch of sugar
  • 1 pinch of toasted sesame seeds

Instructions:

  1. Drain the kimchi in a strainer over a bowl to catch the brine.
  2. Wash the scallions and cut into thin slices. Peel and finely chop the onion.
  3. Roughly chop the kimchi and add back to the brine with the scallions and onions.
  4. Add the remaining pancake ingredients and mix until you get a smooth dough.
  5. Heat the oil in a pan over medium-high heat and fry the dough in four batches on both sides, about 3 min. on each side. 
  6. Combine all the ingredients for the dipping sauce in a bowl.
  7. Serve and enjoy!
