Sigeumchi-namul

Sigeumchi namul is a popular side dish in Korea. It consists of blanched spinach seasoned with garlic, soy sauce, sesame and chili, and it's super easy to prepare:

Ingredients (as a side dish):

  • 1 garlic clove
  • 1 scallion
  • 1 fresh chili pepper
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 lb. fresh spinach

Instructions:

  1. Peel the garlic and grate into a large bowl. Finely chop the scallion. Deseed and slice the chili pepper. Add the scallions and chili to the bowl. Add the soy sauce and sesame oil, and mix well to combine.
  2. Wash the spinach, tear into small pieces, and blanch in boiling water for 2 min.
  3. Drain the spinach by squeezing out as much liquid as possible (you can add it to a strainer and press the liquid out using the back of a spoon). Add to the bowl with the sauce, toss to combine and serve.
