Açma

Açma is a Turkish pastry made with yeast, comparable to the German Hefezupf or the French brioche. Since it tastes slightly sweet, it works well as a breakfast roll, served with butter and jam, or honey. Here's our recipe if you want to try it out:

Ingredients (for one pastry ring):

  • 4 cups flour
  • 1 cup oil
  • 4 tbsp sugar
  • 1 sachet of dry yeast
  • 1 tsp salt
  • 1 glass water
  • 1 egg yolk (for coating)
  • A pinch of black cumin

Instructions:

  1. Preheat oven to 350°C.

  2. Mix the salt, sugar, yeast, oil and water in a bowl. Leave for 10 mins. allowing the mixture to swell.
  3. Knead in the flour until a soft dough is formed. Leave to rise in a warm place for 1 hour.

  4. Shape the dough as desired.

  5. Let the dough rise again for 30 mins. Brush on the egg yolk, and sprinkle with black cumin. 

  6. Bake in the pre-heated oven for 40 mins. 

  7. Enjoy with honey, jam, or even savory cold cuts!

Ingredients

  • 1 onion
  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
