Cig Köfte

Köfte also comes in a veggie form; Cig Köfte. It's made using bulgur, tomatoes, tomato paste, scallions and lots of hot spices. What's not to love? 

Ingredients (for 7 pieces):

  • 2 3/4 cups of fine bulgar wheat
  • 2 tsp sweet paprika powder
  • 1 tsp hot paprika powder
  • 1 tsp dried chili flakes
  • 4 tsp baharat powder
  • 1/2 tsp salt
  • 1/2 lemon (juiced)
  • 2-3 scallions
  • A handful of fresh parsley
  • 1 tomato
  • 4 tbsp tomato paste
  • 6 tbsp olive oil
  • Iceberg lettuce leaves (for the garnish)

Instructions:

  1. Put the bulgar wheat in a bowl, and pour in enough boiling water so that it's well covered. Allow to soak for 30 mins.
  2. Finely chop the scallions, tomato, and parsley.
  3. Once the bulgar has softened, add all the ingredients to the bowl, along with the lemon juice, spices, olive oil, and tomato paste. Mix well.
  4. Taste, and season if needed.
  5. Enjoy!

Ingredients

  • 1 onion
  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
