Lahmacun

Lahmacun is a Turkish flatbread made with minced meat and spices. It's the ultimate tasty treat, so why not try making one yourself? It makes for the perfect summer snack.

Ingredients (for 1 flatbread):

For the dough:

  • 8 cups flour
  • 1/2 tablespoon salt
  • 1/2 cube yeast
  • 2 tbsp oil
  • 1 cup water 

For the topping:

  • 2 green pointed peppers
  • 1 red bell bell pepper
  • 1 large tomato
  • 3 large onions
  • 1 bunch of fresh parsley
  • 1lb 2oz. minced meat
  • 3/4 cup oliveoil
  • 5 tbsp tomato paste

Recommended herbs to sprinkle on top:

  • Black pepper
  • Salt
  • Hot paprika
  • Sweet paprika
  • Dried chili flakes

Instructions:

  1. Mix the flour and yeast together and add the salt, oil, and water to make a yeast dough. Let it rise for 30 mins. and cover with a damp sheet. Knead again, and let rise for another 30 mins.

  2. For the topping, chop the onions, tomatoes, parsley, and peppers. Mix together with the mince in a bowl and add the herbs. Knead well and mix in the remaining ingredients, i.e. the tomato paste and oil. Continue to knead the whole mass well until the ingredients are evenly distributed.

  3. On a floured work surface, roll out the dough a handful at a time. It should be rolled into 3mm thick patties. 

  4. Spread the mince mixture over the patty and bake in the oven until the edges are golden brown.
  5. Enjoy!

  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
