Börek

Börek is a pastry made from thin, flaky dough such as filo. It's often filled with meat, spinach, cheese, or potatoes and is the ultimate savory snack! One of the most delicious variants is Gül Böregi. Why not try making it yourself?

Ingredients (for 32 pieces):

  • 5 3/4 cups flour
  • 5 1/2 tbsp vegetable oil
  • 3/4 cups milk
  • 3/4 cup lukewarm water
  • 1 tsp salt
  • 1 tbsp sugar 
  • 2 tsp fresh yeast

For the filling:

  • 3/4 cup + 1 tbsp 
  • Turkish white cheese
  • A handful of dill (finely chopped)
  • 1 egg yolk (for coating)

Instructions:

  1. Preheat the oven to 390°F. Line two baking sheets with parchment paper.
  2. In a mixing bowl, put all the ingredients for the dough - except the flour. Let the yeast dissolve among the ingredients.
  3. Add the flour little by little, kneading as you go. The dough should be loose and a little sticky. If the dough sticks to your hands, dust your hands with some flour. Knead the dough again.
  4. Cover the bowls with a cloth and let the dough rise in a warm place for 2 hours.
  5. Lightly flour a surface. Take walnut-sized pieces of the dough, roll them in your hand and place them next to each other on the surface.
  6. Roll out the balls by hand, each to the size of a saucer size. You should have 6 individual 'sheets'. Place 1 teaspoon of filling in the center of each.
  7. Bring the opposite two sides together and press lightly on the two sides with your fingers so they stick together. Wrap the remaining sides around like rose petals, pressing the sides lightly.
  8. Place the boeks on the baking sheets with a little space between them. Brush with egg yolk and bake for about 25 mins. until golden.

  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
