Peanut Butter and Chocolate Slices

This delicious tray bake is quick and easy, plus everyone a pot of crunchy peanut butter sat almost full at the back of their cupboard! Make use of it this weekend and treat your family and friends with this sweet treat.

Ingredients:

For the cake:

  • 1/2 cup butter
  • 3/4 cup crunchy peanut butter
  • 3/4 cup brown sugar
  • 1 egg 
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 tsp baking powder
  • 1 cup peanuts (chopped)

For the frosting:

  • 5 tbsp butter
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/3 cup heavy cream 
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup peanuts (chopped)

Instructions:

  1. Preheat oven to 325°F. Grease a baking tray.
  2. In a large bowl, mix butter and crunchy peanut butter until soft.
  3. Add the brown sugar, egg, and vanilla extract, and beat until well combined.
  4. Sift in the flour and baking powder and stir gently until blended. Stir in peanuts.
  5. Put the mixture into the baking tray and bake for 30 mins. until golden. 
  6. Allow to cool.
  7. Meanwhile, for the frosting, add the butter, creamy peanut butter, powdered sugar, heavy cream, vanilla extract, and salt and mix using an immersion blender.
  8. Spread the frosting over the cake and sprinkle with the chopped peanuts. Allow to set for 3 hours and cut into squares to serve.
  9. Enjoy!

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
