Marble Cake Brownies

A quick classic in an unusual form: Marble cake can also be easily conjured up as a sheet cake. The advantage is that everyone has a tray at home and you don't need an extra loaf tin or bundt pan. The tray is also baked more quickly and you avoid the cake remaining "soggy".

Ingredients:

  • 4 eggs
  • 1 tsp vanilla extract
  • 1 cup butter 
  • 2 cups sugar
  • 4 1/2 cups flour
  • 1 tsp baking powder
  • 1 cup milk
  • 1/2 cup cocoa powder

Instructions:

  1. Preheat the oven to 350°F. Grease a baking tray.
  2. In a bowl, beat eggs, vanilla extract, butter, and sugar until frothy. Mix the flour with the baking powder and add to mixture, before adding 1/4  milk. Mix everything until the mixture is smooth.
  3. Spread half of the batter into the baking tray using a spatula.
  4. Add the remaining milk and the cocoa to the left over batter. 
  5. Pour the second batter onto the first batter and "marble" with a fork to create the marbled pattern. 
  6. Bake for 30 mins. Allow to cool.
  7. Enjoy!

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
