Vegan Espresso Cake with Almonds

These days, most recipes can be veganized if a few alterations are made, but this delicious traybake is a vegan delight from the get go! Decorate with extra almonds for a more nutty flavor.

Ingredients:

  • 1/2 cup espresso
  • 1 cup grated carrot
  • 3/4 cup chopped walnuts
  • 1 1/2 cup gound almonds
  • 1 cup + 1 tbsp flour
  • 1 cup + 1 tsp brown sugar
  • 1 tsp baking powder
  • 1 sachet vanilla sugar
  • 4 tbsp cocoa powder
  • 1 pinch salt
  • 1/2 cup + 2 tbsp plant milk
  • 3/4 cup sunflower oil or coconut oil
  • 1/2 cup almonds for decoration (optional)

Instructions:

  1. Preheat the oven to 350°F. Grease a baking tray.
  2. Make the espresso and leave to cool.
  3. In a large bowl, mix all the ingredients togther so that a batter is formed.
  4. Pour the batter into the baking tray, and add the almonds for decoration.
  5. Bake for 40 mins.
  6. Serve up and enjoy!

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
