Apple Traybake

There are countless variations of fruit traybakes, all equally as delicious as each other! This apple traybake however, might just be our fave. Here's the recipe:

Ingredients:

  • 2 medium-sized apples (peeled and cored)
  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 cup butter
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup milk

Instructions:

  1. Preheat oven to 350°F. Grease a baking tray.
  2. Once peeled and cored, cut apples into quarter before cutting thr quarters into halves.
  3. In a medium bowl, add the flour, baking powder, cinnamon, and salt. Mix.
  4. In a large bowl, beat the butter and brown sugar using an immersion blender until light and fluffy. Add an egg and beat until combined. Add the second egg and the vanilla extract and beat until smooth. 
  5. Add 1/3 of the flour mixture and mix. Add 1/2 the milk and mix again. Repeat the process 3 further times until everything is mixed. 
  6. Add 3/4 of the apples (save the remaining 1/4 for decoration). Transfer the cake batter to the baking tray. Level it out, before adding the remaining apples on top.
  7. Bake for 45 mins.
  8. Transfer to a wire rack to cool.
  9. Enjoy!

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
