Cinnamon Walnut Cake with Zucchini

This cake is a winner on the juiciness scale due to a special ingredient, zucchini! Anyone who is skeptical about the inclusion of this green veggie should give it a chance because it really is surprisingly irresistable.

Ingredients:

For the dough:

  • 1 cup brown sugar
  • 1 cup white sugar
  • 4 eggs
  • 1 cup sunflower oil
  • 2 cups flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt 
  • 1 1/2 cups fresh zucchini (freshly grated)
  • 1 cup walnuts (chopped)

For the cream cheese icing:

  • 1/2 cup + 1 tbsp butter
  • 1 cup + 1 tbsp cream cheese
  • 1 tsp vanilla extract 
  • 1 cup + 1/2 cup powdered sugar

Instructions:

  1. Preheat the oven to 360°F. Grease a baking tray.
  2. In a large bowl, using an immersion blender, mix the brown sugar, white sugar, eggs, and oil.
  3. Sift in the flour, cinnamon, baking powder, and salt. Mix well with the wet ingredients.
  4. Add the zucchini and chopped walnuts. Mix.
  5. Pour the batter into the baking tray and bake for 40 mins. Allow to cool.
  6. For the icing, beat the butter and cream cheese until creamy. Add vanilla and mix.
  7. Stir in the powdered sugar until the mixture is smooth.
  8. Spread over the baked cake.
  9. Enjoy!

  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.

  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
