Sour Mandarin and Cream Cake

This creamy traybake with mandarin and cinnamon-sugar is tarte and tangy — perfect for anyone who likes fruity flavors!

Ingredients:

  • 1/2 cup + 1 tbsp margarine
  • 1 cup sugar + 3 tbsp sugar
  • 1 sachet vanilla sugar
  • 4 eggs
  • 1 cup + 3/4 cup flour
  • 1 sachet baking powder
  • 3 tbsp sugar
  • 3/4 cup orange soda
  • 3 tins mandarins
  • 2 cups sour cream
  • 2 cups whipped cream
  • 1-2 tsp ground cinnamon

Instructions:

  1. Preheat oven to 360°F. Grease a baking tray.
  2. In a bowl, beat the margarine, sugar, vanilla sugar, and eggs until frothy.
  3. Add the flour and the baking powder, and fold in the sugar and the orange soda.
  4. Pour in baking tray and bake for 25 mins.
  5. Once the cake has cooled, drain the mandarins and decorate the cake.
  6. Whip the cream and mix in the sour cream. Spread on top of the cake. 
  7. Sprinkle the ground cinnamon on top and enjoy!

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
