Loaded Queso Dip

This rich and creamy dip is packed with taco-seasoned sausage, juicy tomatoes, and spicy jalapeños, making it the ultimate crowd-pleaser for your Super Bowl party. Perfectly melty and loaded with flavor, it's a game-day indulgence that pairs perfectly with tortilla chips! Want it smoky? Add a pinch of smoked paprika or fire-roasted tomatoes.

Ingredients (for 8-10 servings):

  • 1 lb ground sausage (chorizo or spicy sausage works well)
  • 1 tbsp taco seasoning
  • 1 (10 oz) can diced tomatoes with green chilies (drained)
  • 1 small jalapeño, finely diced (optional for extra heat)
  • 16 oz Velveeta cheese, cubed
  • 1 cup shredded pepper jack cheese
  • 1/2 cup whole milk (or more as needed)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp chopped cilantro (for garnish)
  • Tortilla chips, for serving

Instructions:

  1. In a large skillet over medium heat, cook the sausage until browned. Drain excess grease and stir in taco seasoning.
  2. Reduce heat to low. Add the cubed Velveeta, shredded pepper jack, milk, garlic powder, and onion powder. Stir continuously until smooth and creamy.
  3. Mix in the drained diced tomatoes and jalapeños, stirring until well combined. If the queso is too thick, add a splash of milk until desired consistency is reached.
  4. Transfer the queso to a serving bowl or keep warm in a slow cooker on the "low" setting. Garnish with chopped cilantro and serve hot with tortilla chips.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
  9. Enjoy!
