Cold asparagus soup

Asparagus is the perfect vegetable to make soup with, but as spring gets closer you may not exactly feel like eating a bowl of steaming, hot soup! So for an original cold soup recipe, start by boiling a bunch of asparagus in vegetable stock. When cooked, blend until smooth and add one clove of fresh garlic, 1/3 cup of extra virgin olive oil and a tablespoon of sour cream. Mix well and then chill in the fridge for 2 hours. Top with asparagus tips and serve ice cold!
