This super simple recipe is totally creamy and delicious, but you might want to prepare it the night before or at least set aside a few hours for chilling time. That way you can spend more time hanging with Dad!
Preheat the oven to 325° F. Place a 9-inch round baking pan into a roasting pan covered with a clean dish towel. Prepare a simple caramel using water and sugar, and use it to coat the bottom of the baking pan. Let set for 5 to 10 minutes. In a blender, combine 1 can sweetened condensed milk, 14 ounces room-temperature milk, 3 large eggs, 2 teaspoons vanilla extract and 1/4 teaspoon salt. Blend thoroughly for 1 minute. Pour the mixture on top of the caramel. Place the roasting pan in the oven (with the flan), and then pour hot water into the roasting pan up to halfway. Bake for about 1 hour until the flan is done with a slight wiggle. Remove baking pan from the roasting pan and let cool for 15 minutes. Place in the refrigerator for 2 to 3 hours. Flip over onto a dish when ready to serve.
