Brookie

Is Dad a cookie AND a brownie guy? If he's into dessert, chances are the answer is yes. Not to worry, just cook him up a perfectly yummy hybrid of the two: the Brookie! 

To make the brownies, preheat the oven to 350° F, and butter your 9X13 baking dish. Melt 1 cup butter in a saucepan over low heat. Add 2 1/4 cups sugar, and stir constantly for about 2 minutes. Pour mixture into a large bowl, and whisk in 1 1/4 cups cocoa powder, 4 large eggs, 1 teaspoon salt, 1 teaspoon baking powder and 1 tablespoon vanilla extract. Use an electric mixer to combine. Add 1 1/2 cups all-purpose flour and 2 cups semisweet chocolate chips. Mix well. Set aside.

For the cookies, mix together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda and 1 teaspoon salt. Set aside. In another large bowl, beat together 1 cup softened butter, 3/4 cup sugar, 3/4 cup brown sugar and 1 teaspoon vanilla extract until nice and creamy. Add 2 large eggs, one at a time. Mix well after each one. Slowly beat in the flour mixture, and then stir in 2 cups semisweet chocolate chips until fully incorporated.

Cover your buttered dish with greaseproof paper, and pour in the brownie batter. Top with cookie dough preparation, smoothing out the surface as you go. Bake for about 30 minutes or until you can easily insert a knife that comes out clean.
