MOROCCO - Salade de carottes à la marocaine: Moroccan carrot salad

This savory Moroccan salad is extremely simple to make and has the perfect exotic flavor profile to accompany meaty tagines, marinated grilled meats or various couscous dishes. To make it, cut some carrots into small rounds or cubes and cook them for about 15 minutes. After draining and cooling them, flavor with lemon juice, olive oil, garlic, cumin and cilantro. Season to taste. You can even add a little orange juice to the mix for a sweet zingy finish.

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
