FRANCE - Salade Niçoise: Mediterranean salad

The French might prefer mayonnaise to ketchup for their fries, but they hold the mayo for this Mediterranean-style tuna salad from the south of France. There are subtle variations, of course, but this one starts with a bed of fresh Mesclun (mix of baby leafy greens) topped with tomato slices, quartered hard-boiled eggs, thinly sliced red onion, flaked tuna, anchovy fillets, green beans and Niçois black olives. For the dressing, you'll need olive oil, vinegar (balsamic or wine vinegar), salt and pepper to taste.

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
