Make a batch of healthy muffins, and store them in an airtight container for the week. Switch up the ingredients so your kids don't get bored: cocoa, banana, apricot, blueberry, etc., and incorporate healthy carbs, such as oatmeal or quinoa for extra protein.

VIDEO: Sweet Potato Toast

Did you know you can toast sweet potato slices... and it's absolutely delicious!

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
