Crispy chicken koftas

These crunchy creations are found in many Middle-Eastern and Eastern Asian cuisines. They're essentially over-sized meatballs that often incorporate rice, bulgur or minced vegetables. To make, combine 1 3/4 pounds ground chicken with 1 finely chopped onion, 1 cup mashed potatoes, chiseled cilantro, 1/2 cup breadcrumbs, 2 pinches of cumin, salt and pepper to taste. Mix well and form into small cylinders. Brown the koftas in an oiled skillet. Serve with basmati rice.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
