Moroccan chicken tajine

For this flavorful exotic recipe, cook 1 finely chopped onion in a lightly oiled saucepan on medium heat. Add 4 chopped chicken breasts, 1 minced garlic clove, ground coriander, ground ginger, a bit of ground turmeric and a dash of cinnamon. Cook for a few minutes, then add water to the pan, cover and let simmer. In another saucepan, combine 2 cups dried apricots with 1/2 cup water, 1/4 cup sugar, 3 1/2 tablespoons butter cut into cubes and 1 teaspoon orange blossom. Stir well until butter is melted. Add the apricot mixture to the chicken and let cook 5 more minutes. Serve on a fluffy bed of couscous with a dollop of harissa sauce, if you like it hot.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
