Crepes

The initial crepe of the batch is often a flop, especially if your pan is not hot enough yet. So don't give up too soon! Heat your pan and grease thoroughly with butter (or oil if you prefer). Spread a ladle of batter evenly across the pan, and allow to cook until the bottom is browned. Then gently lift one edge of the crepe and slide your spatula under it. Flip the crepe in one swift motion, and cook for about 10 seconds until the other side is lightly browned. When you feel up to it, you can also try flipping with just a flick of the pan. Loosen the crepe first, then lift the pan and jiggle it to ensure that the crepe is not sticking anywhere. To flip the crepe, snap the pan away from you and upwards in one firm, simultaneous movement.

These Cheesy Cauliflower Pizza Cups are just what you need when snack o'clock rolls around!

 

Ingredients

Makes 6

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
