Mini Parmesan biscuits

These mini biscuits are flavored with savory fennel seeds. Make them the next time you're hosting at your place. They'll make your guests melt at first bite! Stir together butter, grated Parmesan, flour, fennel seeds and sea salt. Add 1 egg and the zest of 1/2 lemon. Mix well to combine. Spread the mixture onto a baking dish covered with plastic wrap, and refrigerate for 30 minutes. Once the dough is slightly firm, make small rounds out of it using a cookie cutter or the rim of a shot glass. Sprinkle with sesame seeds (optional), and bake the biscuits for 8 minutes at 350 °F until golden.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
