Pasta alla carbonara

The combination of Parmesan cheese and eggs—not cream—is what gives authentic pasta alla carbonara its irresistibly creamy texture and rich taste. Cook pasta, then drain and set aside, reserving 1 cup cooking water. Meanwhile, stir together eggs and freshly grated Parmesan cheese. Brown diced bacon in a skillet, and remove to drain on paper towels. Leave the fat in the skillet, and add minced garlic. Heat on low for 1 minute, and add the pasta followed by the cheesy egg mixture, tossing quickly to combine. Then stir in the cooked bacon, and season with salt and pepper to taste. If necessary, add some cooking water to thicken up the sauce. Serve with extra grated Parmesan and freshly ground black pepper.
