Creamy bolognese sauce

Pasta bolognese has many variations, but it's essentially composed of pasta (cooked al dente), either spaghetti or tagliatelle, ground beef, peeled tomatoes and aromatics, such as garlic, onion, thyme and a bay leaf. For a more deliciously creamy variant, stir in grated Parmesan 1 hour after the sauce has been simmering, and cook for 30 minutes more. Remove the bay leaf when done, and don't forget more grated Parmesan to serve.

Did you know you can toast sweet potato slices... and it's absolutely delicious!

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
