Homemade basil pesto

There's no reason for you to buy prepared pesto sauce, when you can easily make it at home. Simply add fresh packed basil leaves and pine nuts to your food processor. Pulse a few times, then add minced garlic cloves and freshly grated Parmesan-Reggiano cheese. Pulse several times more, scraping down the sides with a rubber spatula. Then gradually pour in olive oil as you continue to pulse. Keep scraping the preparation down the sides in the process. Season with salt and cracked black pepper to taste. Give it all a good stir, then toss with pasta or use as a condiment for meats or other dishes. You can also always  top your dish with extra grated Parmesan for good measure.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
