Minestrone soup

This classic Italian soup is made of cooked and pureed potatoes, white beans, carrots, zucchini, tomatoes and finely chopped cabbage. Start by sauteing some onion in a skillet on medium heat. Add bacon lardons (thick chopped pieces of bacon), the rest of the veggies, minced garlic and a few snipped basil leaves. Pour in cooking broth until the ingredients are covered, and let simmer for at least 1 hour and 20 minutes. Then add rice and continue cooking for 20 more minutes. When the rice is cooked through, stir in grated Parmesan and serve.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
