Roasted chickpeas

Need a quick salty snack for your party tonight or do you just want to have it on hand to enjoy yourself? Try these easy Parmesan roasted chickpeas. To make, combine 1 can of drained chickpeas with a bit of oil, 3/4 cup grated Parmesan, sea salt, cumin and chili powder. Stir well, and pour onto a greaseproof baking sheet. Bake for about 40 minutes at 350 °F, stirring regularly.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
