Pickled eggs with fresh beets

This recipe for pickled eggs with fresh beets is the perfect light and healthy meal to balance out the heaviness of your Easter festivities. The hard-boiled eggs need to sit for 5 days minimum in a glass container with cooked, cut beets and sliced onion, immersed in a mixture of the beet cooking water, raw apple cider vinegar, honey, cinnamon, cloves, salt and pepper. Once they're ready, the eggs will have taken on a vibrant fuchsia color and extra tangy flavor.
