Late spring and early summer are rhubarb's time to shine.  This tart delicacy is actually technically considered a vegetable, not a fruit, although we often treat it as one.  When selecting your rhubarb, look for stalks that are pink and red rather than green, as the latter can be a bit sour.  Make sure the stalks are firm and crisp looking, not droopy or dried out.
